The growing and processing of matcha tea leaves is an elaborate and complex process involving multiple stages. Here's a detailed look at both processes:

Growth:

The growth of matcha tea leaves has specific requirements for climatic conditions. It needs to grow in an environment with good lighting and sufficient rainfall. The growth temperature should be above 10°C. The average temperature during the growth period is about 17°C, and the humidity should be maintained at about 80%. In addition, sufficient rainfall is also a necessary condition for the growth of matcha. The precipitation during the growth period should be above 1500mm. Matcha tea leaves are generally grown on slopes with an altitude of 500 to 800 meters. This altitude provides suitable temperature, air humidity and fertile soil, which is conducive to the growth of Matcha tea leaves.

Processing process:

The processing process of matcha mainly includes the steps of tea cutting, screening, winnowing, crushing, sieving and gold detection.

Cutting tea: Cut the tea leaves into uniform ground tea pieces of 0.3~0.5 cm in size through tea cutting machines such as rolling cutters and tooth cutters.

Screening: Sieve the cut tea leaves to separate out the tencha that does not meet the specifications, and then repeatedly cut, roll and screen until all the tea leaves meet the specifications.

Winnowing: Use the force of wind to remove yellow flakes, tea stems and inclusions in Tencha, and separate Tencha of different weights to prepare for subsequent grading and crushing.

Crushing: This is a key step in matcha processing. There are many crushing methods, including ball mill crushing, stone mill crushing, continuous ball mill crushing and air flow crushing. High-quality matcha is generally crushed using stone mills, while most matcha companies use ball mills.

Screening: Use a metal sieve to remove uncrushed tencha and other surface foreign matter.
